Steps to make Brioche:
- Milch mit Zucker erwärmen, ca. 38 C
- Mehl, Salz, Trockenhefe zusammen mischen, Eier und Milch (Zucker) nach und nach hinzufügen. Mit einem Holzlöffel oder Küchenmaschine zu einem Teig rühren.
- 30 Minuten ruhen lassen, bis der Teig elastisch wird. Nochmal kurz rühren, weiche Butter in den Teig einarbeiten.
- Den Teig, erst 30 Minuten bei Zimmertemperatur gehen lassen, danach über Nacht (12-15 Stunden) im Kühlschrank (5-10c) ruhen (aufgehen) lassen.
- Am nächsten Tag aus dem Kühlschrank herausnehmen, Luft heraus drücken und geschmeidig zusammen falten. Dann 24 (2x12) Brötchen formen
- 2 Stunden bei Zimmertemperatur aufgehen lassen, danach mit Ei bepinseln.
- Bei 180 Grad C, 18 Minuten backen.
- Als Rosenkranz oder Kranz servieren.
